Menu June 2 - June 10

It is really heating up here so this week's menu was just for the hot days. I do not want to be cooking in the heat every day. I looked for things that can put together straight from the fridge or only needed one thing cooked. Enjoy! 

Menu

Grilled Cheese with Tomato Soup
Take the bread and put a slim coating of mayo (or miracle whip) on one side of the bread. Place the coated side down in the pan. After it heats you can place the cheese and the other slice of bread. Flip until done. *Quick: I have also put slices in the toaster. When done I place the cheese inside and zap it for a few seconds in the micro.

Heat soup according to directions, but it is important not to boil it! The tomato soups from the Apples to Zucchini book are great. Campbell's tomato soup is yummy too. Pretty low phe lunch!

Sausage with fries
For low phe sausage, my daughter loves the Veggie Meat Substitute from Apples to Zucchini.

Artichoke and Sun-dried tomatoes in pasta
I got this recipe from  here. I am going to omit all of the parmesan cheese from the recipe.

Foccacia Bread Sandwiches
I made foccacia bread according to the directions at tasteconnections.com. My little girl likes to dip the bread, but complained that it was too hard for a sandwich. The foccacia bread I made for my son and I, did not turn out so well. I don't know what I did!

Pita Tacos
Using this recipe, I will exclude the turkey and cheese. I plan to try to make tortilla pockets for the pita bread. Tasteconnections.com  has a really good recipe for tortillas.

Veggie Sandwiches
Here is the recipe. Not much to change, except I will be using low-protein bread instead of the foccacia. I will also not be putting feta cheese on the low-protein version. I do have some Sandwich Mate Swiss-flavored slice cheese that I will see about adding.

Enchilada Lasagna
Ahhh, Alton Brown! I love his recipes. This was rated as one of the best for the year!  The recipe is here. For the low-protein version there will be changes. I will not be using any cheese or chicken. The tortillas will be made from the tasteconnections recipe. I thought about adding roasted eggplant (cookforlove.org has the best way to do this on their chili recipe).

Cobb Sandwiches
Ok, this will see a lot of changes, but I liked the idea. I will be taking out the meat, cheese, and egg. I will be adding maybe some sliced cucumber, romaine lettuce, and maybe a sliced pepperocini.

Caesar Club Sandwich
Mmmm. Take out the chicken and pancetta. I will probably use grilled portabella muchrooms. No parmesan, but will see how low-protein the anchovy paste is. May be able to find a low-protein Caesar at the supermarket. Mmmmm.

Baked Mac n' Cheese
Another by Mr. Alton Brown. This will take a bit of re-invention. Low-protein noodles, almond milk, Country Sunrise Cheese Sauce, and egg replacer.

Chili
Do this recipe just like the directions say. It does take more time, but it is soo worth it.

Baked Chicken with roasted potatoes and other veggies
Just regular old baked chicken. Throw some other veggies on the side. I will probably add veggie meatballs to the side.


So there it is, my list of "extras" I will be making this week. I will try to make a regular thing of this and post some pics and tips for the recipes after we have tried them.
